My Usual Chili

This isn't the greatest chili recipe in the world, but it is one my wife and oldest kid will eat.

1 large onion
3-4 ribs celery
1/2 green pepper
1 large clove garlic
1-1.25 lb beef (usually chuck, ground or chopped)
3 Tbsp chili powder
1 tsp cumin (if your chili powder doesn't contain cumin)
1/4 tsp black pepper
2 Tbsp black molasses
a few dashes of Liquid Smoke (tm)
1# can tomatos
1# can kidney beans
yellow corn meal

Chop the onion, celery, and pepper. Sauté in a small amount of oil until onion is transparent. Add the garlic, minced, and the beef, and allow to brown. Add the flavorings, cook a bit more. Add the tomatos, broken up, and simmer 1/2 hour. Add drained beans and simmer 1/2 hour more. Thicken with about 1 Tbsp of cornmeal, making sure the meal has time to cook.

Spaghetti Sauce

1 med. onion
3 cloves garlic
1 lb ground beef
2 4oz. cans tomato paste
1 28 oz. can crushed tomatos
1 15 oz. can whole tomatos
1-1/2 tsp oregano
1/4 tsp thyme
1 bay leaf
1 pinch red pepper flakes
2 Tbsp brown sugar

Chop onion and garlic. Sauté in small amount of oil until translucent. Add garlic and beef and allow beef to brown. Add remaining ingredients, breaking up the tomatos, and water if needed, and simmer about 1/2 hr.
